Hello World and Happy Autumn to all of you! Today I was experimenting with recipes for roasted pumpkin seeds, a classic fall snack. Here is the recipe that worked out best for me.

Ingredients:
- Fresh pumpkin seeds
- Olive oil
- Salt
- Black pepper
- Garlic Powder
- Seasoning of Choice (I used Paprika and Italian seasoning)
Steps:
- Under cold water, wash the pumpkin seeds until they are clean.
- On a plate, leave the seeds to air dry for a few hours (The wetter they are, the longer it takes to roast).
- Preheat oven to 350o F (or about 177oC)
- In a bowl combine the dried seeds with a mixture of olive oil, salt, black pepper, and garlic powder.
- Line a metal tray with parchment paper or spray cooking spray.
- Evenly spread the seeds around the tray.
- Sprinkle your seasoning(s) on top of the seeds. (For half of the seeds, I used paprika, and the other half I used Italian Seasoning)
- Bake the seeds in the oven for 12-15 minutes. After five minutes do a taste test and add more salt, pepper or seasonings if needed. Put it back in the oven for the remaining time.
- Let the seeds cool for 5 minutes.
- Enjoy!
